Who doesn't love hummus on a hot Hong Kong Spring or Summer day? This easy to make snack is dairy free, egg-free, nut free and can be gluten free if you choose gluten free wraps/tortillas. Perfect for kids lunches, brunches, picnics or junk trips.
1 cup hummus (any flavor or from your own home-made favorite recipe)
2 large soft wraps or tortillas (flour, whole wheat or gluten-free)
½ cup thinly sliced red pepper
½ cup thinly sliced cucumber
4 leaves of lettuce
Note: You can add fruits or other berries as you like; I make my pinwheels with just tabouli and hummus.
