Healthy Shanghai Noodle Salad

Like many adopted dishes, this is more of an Chinese inspired dish rather that what you would actually find in Shanghai. However, inspired it is! This colourful mix of bright, crunchy veggies and chilled buckwheat noodles is a refreshing and delicious meal. Buckwheat is great for your heart function, blood pressure and these noodles are naturally gluten-free (however if celiac check the facilities where they are produced). 


1 lb of soba noodles

¼ cup ketchup

3 ½ tbsp sesame oil

3 ½ tbsp soy sauce or gluten free tamari

2 tbsp brown or coconut sugar

2 tsp salt

1 ½ tsp lime juice

¼ cup scallions (green onion)

2 carrots, peeled and shredded

1 small zucchini, cut into matchsticks

1 red bell pepper, cut into matchsticks

1 tbsp toasted sesame seeds

1 tbsp chia seeds

1 tsp crushed red pepper flakes

1 cup of diced cilantro and spring onion


  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
  2. Once the water is boiling, stir in the noodles and return to a boil. Cook uncovered, stirring occasionally, until they have cooked through (approx 5 mins).
  3. Drain well in a colander and set in the sink. Rinse the noodles with cold water several times to chill, then drain again.
  4. In a large salad bowl, whisk together the ketchup, sesame oil, soy sauce, brown sugar, kosher salt and lime juice until the brown sugar has dissolved.
  5. Place the noodles, green onion, carrots, zucchini, red pepper, sesame seeds and red pepper flakes into the bowl and gently toss thoroughly mix the salad and coat with dressing.
  6. Chill at least 2 hours before serving. Garnish with diced cilantro and spring onion prior to serving.
