Buckwheat is great for your heart function, blood pressure and these noodles are naturally gluten-free (however if celiac check the facilities where they are produced).
1 lb of soba noodles
¼ cup ketchup
3 ½ tbsp sesame oil
3 ½ tbsp soy sauce or gluten free tamari
2 tbsp brown or coconut sugar
2 tsp salt
1 ½ tsp lime juice
¼ cup scallions (green onion)
2 carrots, peeled and shredded
1 small zucchini, cut into matchsticks
1 red bell pepper, cut into matchsticks
1 tbsp toasted sesame seeds
1 tbsp chia seeds
1 tsp crushed red pepper flakes
